This pasta laden food truck puts a gluten free spin on traditional Italian fare

It wasn’t too long ago that the word gluten was a food term just as foreign to us as agnolotti. Now, while not all of us fully understand exactly what it is, we sure as hell know about it, for it seems every Tom, Dick and Harry have some form of gluten intolerance, and we know what kind of food contains it too: everything bloody delicious. Luckily, a rise in the gluten-free movement has led to a whole trove of innovative alternatives that mean nobody has to miss out on their favourite fare, and the latest of the bunch might just be the best of them yet — an entire range of handmade, gluten-free pasta, courtesy of food truck Amaranto Pasta & Cucina.

For the Italian duo behind the truck, it was a sudden diagnosis of gluten intolerance for Luisa that inspired husband Tommaso to delve into the world of gluten-free cuisine, “after hundreds of attempts, with kilos of pasta winding up in the trash,” explains Tommaso, “I eventually found the right balance using seven different flours and starches.” The gluten-free option was a sure-fire hit amongst the couple’s Italian friends, inspiring them to start their own business and bring their revolutionary fare to the masses.

Those with food intolerances or dietary requirements are often used to slim pickings, usually, a single miserable option. But not with Amaranto. The one-stop food truck serves up a delightful menu that covers every pasta craving possible, whether that’s lamb ragù pappardelle or kumara gnocchi, béchamel topped cannelloni or the classic bolognese inspired tagliatelle. Not only serving up a rotating menu of piping hot pasta to any lucky devil who happens to be in the vicinity of the truck, the duo will also deliver fresh, handmade pasta and sauce straight to your door — meaning that you can have a bit of Amaranto every night of the week.

As with all food trucks, the location can be a tough one to pin down, so how do we get our hands on the stuff? “Most Wednesday’s you can find us in Leigh, next to Leigh Central,” explains Tommaso, whereas the weekends are reserved for Matakana. Expect to find them on a Friday and Saturday evening in front of the River Nile linens, and pitched up at the Farmers Markets early Saturday morning — but to get a better grip on their whereabouts, we suggest you keep up to date with their Facebook, they might be hitting a spot near you sooner than you think.
