We're inclined to sip and nibble seaside at this sophisticated speakeasy.

With only a select few establishments dedicated to the art of conjuring a masterfully made cocktail, our latest inclination is to sip away seaside at Princes Wharf’s latest cocktail haunt, Coley & Punch.

Their unique menu is designed by their master mixologist Kate Cramphorn, who has made a point of the finer details. The Whiskey & Fig Sour is a smooth marriage of bourbon, shaken with fig liqueur, fig jam, freshly squeezed lemon juice and egg white, while the Montenegro Mule is an icy thirst quencher that’s a twist on the classic Moscow Mule made with fresh lime, fresh ginger, Montenegro amaro liqueur, ginger beer and angostura bitters. For the Negroni lovers out there, a must try is the Boulevardier, a twist on the Italian staple that uses bourbon instead of gin, Campari, sweet vermouth, served on a sphere of ice, and cleverly smoked with cherry wood chips, garnished with orange zest and Amarena cherries.

As with any decent cocktail bar, their elevated menu features bites that complement the list of libations. For those who’re after a touch of decadence, the Osetra caviar, potato rosti, sour cream and cornichons will do more than just please, while the charcuterie board and the whipped goats curd with house-made grisini are simple yet effective.

With a steady stream of summer’s balmy nights still ahead of us, we dare say there’s no better excuse to visit this sophisticated cocktail bar.
