Recipe: the easiest (and almost guilt-free) chocolate mousse you have to try

Here in the office, we’ve been pretty healthy, you know, with summer coming and whatnot. But, as none of are immune to that dreaded 3 o’clock sugar craving that seems to arrive right on time, every day, we set out in search of some tasty, guilt-free snacks to see us through. Easy to make at home, keep in the freezer and then bring with you to work, this two-ingredient chocolate mousse truly is, the most decadent afternoon treat.

Serves two.

Ingredients
100 grams 85-90% dark chocolate (Whittakers or Green & Blacks Organics are our favourites)
3 eggs

Method
1. Melt the chocolate in the microwave or in a bain-marie. If the former option is chosen, be careful to check often so as not to burn.
2. Separate the eggs and then lightly whisk the yolks using a fork. Use an electric whisk to beat the egg whites until soft peaks form.
3. Remove the chocolate from the heat and leave to cool to room temperature. Once the chocolate has cooled a little, beat in the egg yolks, then fold the egg whites into the chocolate mixture (it can take a few minutes for it to look like a chocolate mousse).
4. Pour into small cups and chill in the fridge for 20 minutes. Serve with raspberries, strawberries, blueberries and cream.
