The current abundance of avocados lining our local market shelves calls for us to re-evaluate our healthy snack time favourite — guacamole. Always a crowd pleaser, in its most basic form all you need is a handful of ripe avos, a squeeze of lemon or lime and a dash of sea salt for a deliciously balanced batch. Although we may have perfected our personal guac formulas with other zingy ingredients, we’ve sought out to expand our repertoire with these three unique recipes.
Spring Time
Ingredients
4 avocados
400g well-cooked asparagus
2 thinly sliced radishes
1 tbsp of lime juice
2 tbsp of chopped Italian parsley
Salt and pepper to taste
Method
In a bowl, mash the ingredients together with a fork. The asparagus stems should roughly stay intact resulting in a rustic looking dip with pops of colour.
Tropical
Ingredients
4 avocados
1 tbsp of lime juice
1/2 cup diced mango
1/2 cup diced pineapple
1/4 cup chopped basil
1 tsp of fish sauce
Salt and pepper to taste
Method
In a bowl, roughly mash ingredients together with a fork, again the more chunky and rustic, the better.
Broccomole
Ingredients
3 cups chopped and cooked broccoli
1 jalapeño, seeded and chopped
2 tbsp green onions
1 garlic clove
1 tbsp of coriander
60g of sour cream or cottage cheese
Salt and pepper to taste
Drizzle of olive oil
Method
A low-calorie alternative, combine all of the ingredients in a food processor for a smooth and creamy dip that can be served warm.
