The afternoon snack is universally acknowledged as a necessary part of any well-structured day. It can’t be too large, it’s usually always a little bit sweet, and if you can add a touch of caffeine, you’re onto a winner. Recently, Nespresso’s ‘Pears with coffee oatmeal crumble’ has been ticking all the boxes. It’s simple to make, delicious to consume and succeeds in helping us emerge from the 3pm slump, brimming with renewed motivation.
Pears with coffee oatmeal crumble & Envivo Lungo
6 – 8 pears
180 g Lewis Road Creamery unsalted butter
150 g wholemeal flour
100 g brown sugar
100 g cane sugar
150 g ‘quick’ oatmeal
1 capsule Envivo Lungo
10 cl Glenmorangie Original whisky
Pre-heat the oven to 200 degrees Celsius before peeling and cutting the pears into small pieces. Place them in a saucepan over high heat with 50g of butter and 50g of cane sugar until they start to caramelise. Add the coffee and whiskey and leave on high heat to reduce for 3 – 4 minutes before setting aside. In a separate bowl, place the flour, remaining butter (cut into small pieces), brown sugar, remaining cane sugar and oatmeal before mixing with a food processor in small bursts until a coarse-grained crumble is formed. Place the caramelised pears in a dish and cover with the crumble mixture before baking for approximately 40 minutes. Serve warm and accompanied by a cup of Envivo Lungo.
