This healthy, 3 ingredient ice cream alternative is a cinch to make

If you’ve ever visited Disneyland, chances are that you’ve spotted someone eating a towering swirl of Dole Whip. A pineapple-flavoured, dairy-free, soft-serve delight, the refreshing treat has become a bit of a cult phenomenon over the years. Aiming to recreate that magic closer to home, we’ve come up with our own Pineapple Whip interpretation. Spectacularly refreshing and almost healthy, now that pineapples are aplenty, why not give it a go?

Ingredients
1 pineapple, peeled, cored, cut into chunks and frozen
1 cup coconut milk (though you probably won’t use all of this)
maple syrup or honey (to taste)

Method
Pop the pineapple chunks and ½ cup of the coconut milk into a food processor and blitz until it reaches a smooth consistency, adding more of the milk if you need. Taste and sweeten as you wish. Spoon or pipe into bowls, top with a fresh slice of pineapple and enjoy.
